My Story:

I have struggled with my weight my entire life.  Gaining nearly 100 lb. during my first pregnacy.  Loosing this extra weight and more with diet and exercise.  Inspiring me to go back to school for a degree in nutrition. 

I was diagnosed with low-thyroid in the past few years.  Which lowered my energy level and in turn gained weight.  So I am still fighting with my weight.

In October of 2010 I found out I am allergic to carrots, pineapple and sulfites.  As well as sinsitive to gluten.  (Sulfites are preservatives found in most canned and processed foods.)

January 2011 I became Vegan.  This may not be for everyone, but the health benefits are amazing!  I feel so much more energy as well as less aches and pains.  Losing weight too!  And never hungry.  Read "The China Study" for indepth health information.  See youtube clip:

 Tips:

  • Fresh Vegetables and Fruits are key to a healthy diet.
  • Exercise improves and motivates healthy eating practices and digestion.
  • Avoid drinks and snacks with added sugar.
  • Watch portion sizes
  • Eat only until you are full, there are no rewards for a clean plate.  And left-overs are great for snacks and lunch the next day.
  • Do you drink enough water?  Water helps with mood, aches and pains as well as hunger feelings between meals.
  • Dried beans are a good source of fiber, and protein.
  • Whole grains such as brown rice and quinious are excellent sources of fiber.
  • Eat lean sources of protein, such as fish, poutry, beans and tofu.
